Today is the project for awesome and I know I’ve already talked about how Christmas is for charity but seriously, guys, this is the time of year when it is oh so obvious who has and who has not.

I talked about it last year as well and so I’ll make this short and sweet for you. People make videos about charities. People make those videos popular on YouTube by commenting and liking those videos. People raise money. People vote for their favourite videos and the money raised goes to the five most popular. It’s the one day (ish) of the year when YouTube is not about cats and cinnamon and giraffes mating but about decreasing the amount of suck in the world. And in this time of excess spending, it’s good to remember to share what we have with those who have not.

Lebkuchen Spice Cookies

Adapted from The Big Book of Beautiful Biscuits

60 g unsalted butter

255 g golden syrup

1 3/4 cups plain flour

1 tsp baking soda

1/2 tsp ground ginger

1/2 tsp cardamom

1/2 tsp cinnamon

1/2 tsp ground cloves

1/2 tsp ground cocoa

1 tbsp milk

100 g dark chocolate

Melt butter and golden syrup together in a medium saucepan. Bring to the boil and then take off the heat.

Let rest ten minutes. Whisk together dry ingredients and add to the saucepan. Stir together with a wooden spoon and stand at room temperature for 1 1/2 hours.

Preheat oven to 180°C/350°F and line two baking trays with baking paper. Set aside.

On a lightly floured surface, roll out the dough to about 1/2 cm thick. Cut out using your favourite cookie cutters and transfer to baking trays, leaving about a 2cm gap between each cookie. Bake 8-10 minutes (depending on how big your cookies are) and leave to cool on the trays.

Melt the chocolate either in short bursts in the microwave or in a bowl over a pot of simmering water. When the cookies are completely cool, dip each one so that half the cookie is covered. Alternatively, spread the back of the cookie with chocolate. Leave to set on baking paper.
